Chicken Breast (1lb)
AP Flour (1 cup)
Cornstarch (1 cup + 1tbsp)
Egg wash
Fresh Squeezed OJ (1 cup)
Granulated Sugar (1/2 cup)
Rice Vinegar or White Vinegar (2 tbsp)
Soy Sauce (2 tbsp)
Ginger (1/4 tsp)
Garlic Powder (1/4 tsp) or Fresh Garlic Cloves (2)
Red Chili Flakes (1/2 tsp)
Orange Zest (from 1 orange)
Water (1 tbsp)
Instructions:
Add flour, 1 cup cornstarch, and a pinch of salt in a bowl - mix well.
Cut up chicken into bite sized pieces and dredge in an egg wash, then dust in your flour/cornstarch mix.
Fry vegetable oil to 350F
Add in chicken pieces a couple at a time and fry 3-5 mins, or until golden.
Grate your garlic and ginger. In a bowl, add garlic, ginger, orange juice, sugar, vinegar, soy sauce, and red chili flake. Mix well.
Add this sauce to a pot and heat over medium/high to bring to a simmer. Add in cornstarch and the remaining 1 tbsp cornstarch and 1 tbsp water to thicken sauce. Stir in orange zest and cut the heat as sauce becomes thick and syrupy.
