Lemon Bars


Ingredients:

Custard filling:

  • AP Flour (1/4 cup)

  • Granulated Sugar (1 cup)

  • Large eggs (4)

  • Large egg yolk (1)

  • Lemon Juice (2/3 cup)

  • Salt (1/8 tsp)

  • Powdered Sugar

Crust:

  • AP Flour (1 cup)

  • Powdered Sugar (1/4 cup)

  • Unsalted Butter (8 tbsp)

  • Salt (1/4 tsp)

Instructions:

  1. Start with the crust by whisking together flour, powdered sugar, sand salt. Add in the butter and work it in until evenly mixed, you should have a crumbly texture. Press the crust into a parchment lined pan (8’”). Make sure the crust is pressed into the pan so no filling seeps through.

  2. Preheat oven to 350F. Bake crust for 30 minutes then remove from oven. Reduce the heat to 325F.

  3. To make the custard filling combine the sugars and whole eggs + 1 yolk and whisk until smooth. Add in the flour and salt, then slowly add in the lemon juice and whisk until well combined. Let this filling sit for at least 15 minutes to remove as many air bubbles.

  4. While the baked crust is still hot, pour in the custard filling and then add back into the oven for 30 minutes.

  5. Remove from the oven and allow to cool on a rack. Slice into bars before dusting powdered sugar on top.
