Twice Baked Potato


Ingredients:

  • Idaho potatoes 

  • Cheddar Cheese

  • Green Onions 

  • Sour Cream 

  • Paprika 

  • Cayenne 

  • Olive Oil

  • Salt & Bacon

***measurements depends on how many potatoes you have + your own taste/preference!

Instructions:

  1. Wash potatoes thoroughly and pat dry. Cover with olive oil and season with salt. Bake potatoes at 400F for ~1 hour. 

  2. Let potatoes cool until you are able to touch them ~30 mins. Once cool, slice potato in half lengthwise and scoop out potato innards, making sure not to puncture the skin (you will need the skin shells since this will be our vessel!)

  3. Add potato innards into a large bowl. Grate cheddar cheese and add half of this into your bowl. Mix well. Add in diced green onions, sour cream, and your seasonings ** (the amount of everything you add into your potato mix will depend on how many potatoes you are using and your own preference/taste). Mix well. 

  4. Scoop this mix back into potato skins, being careful not to puncture. Fill the potato to just over the top. Press remaining grated cheddar onto the top. 

  5. Chill your potatoes in the fridge for at least an hour. 

  6. When you are ready to eat, bake at 350F for 5-10 minutes, or until completely heated through. 

  7. Be sure to not overheat as the potato will liquify and become lava, still delicious but dangerous and not as aesthetic.  (reason why i don't have an after photo lmao)
